This entire pregnancy, I have been having strong sweet cravings, especially for ice cream. With my gestational diabetes and Group B Strep tests coming up, I thought it was important that I seriously cut back on my sugar intake. I was then motivated to come up with this paleo orange coconut butter fudge recipe.

Dessert Cravings

My cravings began to get so intense that I felt the need to eat a bowl of ice cream every night! I would buy organic ice cream, like Maxine’s (sub brand of Three Twins found at Whole Foods, Earth Fare and other health food stores). Sometimes I would even need to eat a bag of chips too. However, it concerned me that I was having such strong cravings in spite of me choosing treats made with real food ingredients. It was vital to get my sweet tooth under control, especially since someone suggested my cravings could be because of candida.

I know how important it is to take care of yourself during pregnancy, so that not only you can be healthy, but so that your baby can be optimally healthy too. I eat a nutrient dense diet, combat morning sickness with a particular supplement and also supplement my diet with a number of vitamins and minerals.

How to Cut Back on Sugar

I was asking advice from different people. One common thing that people advised was to cut back a lot on sugar. That is a little hard to completely do, especially if you already are consuming a little too much sugar. It may seem counter-intuitive since it feels like it is an impossible feat when you are always cravings sweets. Nevertheless, once you start removing sugar from your diet, you begin craving it less.

One person suggested making fat bombs and another suggested making “fudge” with coconut manna. That is how I was inspired to come up with this recipe for paleo orange coconut butter fudge. I experimented making it with an orange flavor and it turned out well.

This is a huge plus for me with a small child and another one on the way and I know a lot of parents can relate. The hardest part is getting the coconut butter out of the jar. One trick is to set it by the stove or any warm place in your house so it can soften a little before making it. This “fudge” is sure to satisfy your sweet tooth while not completely cutting all sugar out of your diet.

Instructions

  1. Melt coconut manna and oil in a small pot on a low heat.
  2. Stir until it softens.
  3. Add the rest of the ingredients into the pot and stir.
  4. Pour mixture into a small rectangular glass container.
  5. Place container in fridge.
  6. Once the fudge hardens, take a butter knife and cut into squares. Enjoy!
