Healthy food does not have to be incredibly expensive or difficult to make. This was my intimidation at first before starting to eat the paleo diet. I saw the difference in prices at the grocery store for grass fed meat, organic and conventional.
It is easy to see why so many people continue to buy the regular meat. Let me say that the difference in taste with grass fed meats is reason enough to try it, not to mention the health benefits of consuming it. Heat some fat in a pan (like lard, ghee, butter or coconut oil). Season it with sea salt, pepper, herbs and/or spices.
Once you have seared it on both sides, place the roast in the slow cooker. Cut up your veggies of choice (carrots, celery, onions, tomatoes, garlic, etc), and add salt, pepper, herbs and/or spices. Add water or homemade beef broth to the slow cooker until it covers the meat and vegetables.
Turn the crock pot onto the low setting for several hours for a more tender roast. This makes even tough cuts of meat very tender!
I made a roast the other day in my crock pot. It has been a while since I have used it and the soup is wonderful! The great thing about slow cookers is that they do all of the work for you. I encourage you especially to use yours if you are new to traditional cooking. It helps to ease you into more complex traditional cooking.
